Ed Baines trained under Anton Mosimann at The Dorchester, and then on the yacht Wind Spirit, under Eric Toubar and Yves Garnier. He followed this with 18 months in Australia at The Hilton in Cairns, one of the first restaurants in the world to develop Pacific Rim cooking. And slowly working his way back across the world to Europe, he found himself working at The River Cafe, and then set up the chic Armani Cafe. There he met restaurateur Mogens Tholstrup and so became head chef of Daphne's. Three years later he and business partner James Poulton opened Randall & Aubin in Soho.
