Loretta Lynn's Potluck Christmas Dressing I love making a big Christmas dinner for my family. The table is always full of my down-home country cooking, and one thing I always make is this dressing. The kids declared it a family tradition. Hope y'all like it. Serves 6 12 cups cubed day-old white bread or cornbread 4 cups chicken broth 1/2 pound (2 sticks) unsalted butter 2 large eggs 2 (8-ounce) cans sliced mushrooms, drained 1 pint fresh oysters, drained and chopped 1 cup chopped onions 1 cup diced celery 1 cup chopped pecans 1/2 teaspoon salt 1/2 teaspoon dried, crumbled sage 1 teaspoon poultry seasoning 1 teaspoon dried thyme 1/2 teaspoon cracked black pepper 1. Place the bread cubes and chicken broth in an electric slow cooker. Melt the butter in a small saucepan over medium heat and add to the bread mixture. 2. Beat the eggs in a small bowl and add to the cooker, along with the mushrooms, oysters, onions, celery, pecans, salt, sage, poultry seasoning, thyme, and pepper. Stir to blend, cover, and cook on high for 45 minutes. Turn the heat to low and cook for 4 hours more. The first Christmas after I started making some money was a mess. I love Christmas, but I just hated cleaning up the place. The kids got anything they wanted. There was nothing that they could eat that they didn't get, either. That was a bad thing, I think. I think it's nice to want just a little bit. When you get to where you don't want anymore, it's not good. When your kids come in and say, "I want a car for Christmas," you know it's bad. The whole family still comes in every Thanksgiving and every Christmas. And I still cook for them. Everybody comes into the kitchen, but I shoo them into the front room. Sometimes, we'll do potluck. I cook the turkey and make the dressing. I put oysters in my dressing. The oysters make it more moist, but you can't taste them like you can by themselves.
